Dear Frank,
The confusion is caused by an ink spot in the first registration. What at first sight seems to be 15 May, is in fact 5 May; the 1 is in fact an ink spot caused by the first (capital) letter of the second inscription. In that way it all falls into place: 5 May 1740 was (as mentioned) a Thursday, 8 May 1740 a Sunday, and 7 May 1740, the day of birth of the second child mentioned, indeed a Saturday.
